Raw Vegan Tagalong Bliss Balls
I LOVE girl scout cookies. Not like, if I see some girls selling them outside my gym I'll definitely buy a box kind of love. More like, incessantly asking the moms at my agency when they're going to start selling their daughter's cookies again and buying ten boxes then counting down the days till they arrive kind of love. Unfortunately, since I avoid gluten and dairy most of the time, these girl scout cookies now make my stomach hurt if I have too many. Though I have heard that the girl scouts will soon be coming out with some gluten free options (which is going to be so dangerous), I made a recipe that is close to the real taste to tie me over. They're raw vegan, gluten free, dairy free, with no added sugar and they're insanely delicious. Here's the nutrition profile:
Almond butter has tons of protein, supports healthy brain function, and is an excellent resource for giving you glowing skin. Chia seeds as well are a major source of glow and are antioxidant rich, providing an energy boost and healthy digestion. Coconut is a healthy source of fat (yes, I'm in the coconut is healthy camp) which is a natural antibacterial and excellent for digestion. Dark chocolate is a stress reducer and can also help with mental acuity and cinnamon prevents blood sugar spikes to maintain energy levels.
I made these on a Tuesday and they were gone by Thursday. While they're incredibly nutritious, they also serve as good late night food as evidenced by Nick eating a bunch after coming back from a night out. Healthy drunk food? Yes, you heard that right. I love that these bliss balls don't have dates (which I feel like every bliss ball recipe has!) so they're not quite as high in sugar. Next up? I'm trying to recreate Cinnamon Toast Crunch in the form of a bliss ball. Stay tuned!
